01 / ABOUT THE PLACE

About this place

On Friday lunchtimes only, Butajima-kun takes over the kitchen at Menya Suzuharu in Hongo, Tokyo. The standard ramen comes with precise noodle weight options to suit any appetite, ranging from modest mini (150 g) and regular (200 g) servings to generous medium (300 g) and large (400 g) bowls.

The broth delivers deep pork savor accented by a gentle sweetness and body, standing up firmly to square-cut, substantial thick noodles. Bowls arrive topped with tender, thick-sliced chashu pork that pulls apart easily and a mound of beansprouts, meant to be tackled vigorously with optional free additions of garlic or ginger called out when served. Alongside the standard soup ramen, soupless (shirunashi) and miso variations are also available across the same 150 g to 400 g range, offering plenty of variety for return visits.

To take the richness a step further, an extra side dish of seasoned pork back fat (ajitsuke abura) is highly recommended. It can be tossed with the vegetables and noodles to coat them in savory depth, or spooned over rice dishes like the minced chicken rice bowl (tori hikiniku don). Note that payment is cash only, and with service running just 1 day a week, planning ahead for Friday lunch is essential.
